Detailed Job Description
Responsible to all customers and co-workers to provide excellent service in a friendly, sincere and courteous manner. Work closely with the manager to maintain a high level of customer satisfaction
Communicate effectively with staff, student employees, management team members and the general public
Responsible for production of food menu items. Assist Sous Chef with the direction, supervision and training of all production staff.
Monitor food production to maintain proper cooking, portioning and appearance at all times. Control amounts produced in a reasonable and timely manner. Resolve problems affecting production, food quality and presentation.
Insure that all foods are high in quality, served and stored at proper temperatures and times. Follow all New York State and Monroe County health codes as they relate to health, sanitation and safety. Serve as a good example for proper sanitation, cleaning and personal hygiene.
Plan production schedules, requisition food supplies from storage and assist the Sous Chef with ordering
Work with the Sous Chef for creative menu planning and execution in collaboration with production staff
Strive to reduce waste and optimize the profitability of the food service unit working within budget guidelines
Work with Supervisors, Managers and vendors to ensure staff coverage in all areas
Assist Sous Chef and Chef De Cuisine with creation and documentation of all recipes in menu for CBORD Database. Read, Interpret, update and follow standardized recipes. Monitor accuracy of recipes
Ensure cleanliness, sanitation and safety of unit and equipment as well as proper storage, rotation and labeling of items
Responsible for input on cooks performance appraisals, recognition, professional and personal training and disciplinary actions while maintaining proper records
Ensure that all departmental, institute and personnel policies are adhered to
Possess an awareness and basic knowledge of allergens, food sensitivities and dietetic restrictions. Show a willingness to work with the customer and management in resolving potential diet limitations of the customer.
Carry out special assignments as requested by Chef de Cuisine and Sous Chef.
Report to work on time, adhere to break policy, wear proper uniform and hair restraint.
Attend meetings and seminars as requested by manager.
Required Minimum Qualifications
3 years of varied cooking experience including high volume and fine dining Basic computer skills including Microsoft outlook and menu management systems
