The Post-Doctoral Associate will be responsible for carrying out experiments and performing characterization for this project. Must be an experienced scientist and able to use a variety of techniques including chemical, enzymatic and thermal approaches in creating novel ingredients and functionalities in the department of Food Science at Cornell University. This individual will be required to modify and functionalize proteins, and polysaccharides, quantify their stability and eventually evaluate functionality of these ingredients using analytical techniques.
