Manages, plans, organizes, and controls all food production in Food and Nutrition Services. These activities include: menu planning, recipe development, food preparation, monitor and control production sheets, organizing and maintaining schedules and checklists; maintenance of systems and tools to monitor ingredient control and production levels for excesses and shortages. Prepares specialty meals for special events and participates in cooking demonstrations.
Oversees area operations and prioritizes workflow to meet the needs of the department and ensure efficient and financially sound operations.
Directs and supervises activities of staff in assigned area. Hires, orients, trains, disciplines, evaluates the performance of staff. Provides guidance, feedback, and opportunities for development, as appropriate.
Food Production Planning and Coordination:
Plans for and coordinates daily activities of food production. Maintains systems and tools to monitor ingredient control and production levels for excesses and shortages. Monitors and controls food cost waste, leftover and monthly food and supply expenses, conducts monthly inventories.
Menu Planning and Development:
Plans menus for special functions and creates new concepts for additional services.
Prepares food for special functions, patients, retail and cooking demonstrations
Minimum Education: Associate degree.
Major: Culinary Arts or Food Service Management Minimum Experience: 3 years
Hours: Days, working a rotating schedule on weekends and holidays
