Uses commercial kitchen equipment, Sushi tools, standard recipes and procedures in the preparation of nutritious, palatable, and attractive menu items and ensures safety and sanitation procedures are followed in kitchen area of a large, high volume food service facility. Utilize batch cooking to ensure all items are proper temperature and quality.
Professionally trained or equivalent experience with sushi preparation. Experience with standard recipes and procedures. Experience with general and commercial kitchen equipment. Experience with basic math as it applies to cooking. Ability to establish and maintain successful and effective relationships with diverse, multicultural student and staff population. Ability to communicate, works in a team, and work quickly and efficiently.
Previous experience with large quantity cooking using standardized recipes. Previous experience with Sushi tools. ServSafe and HAACP certification.
