If your answer is yes, UW's Housing & Food Services (HFS) has an opportunity for you! UW Dining is looking to hire a Recipe and Development (R&D) Chef to our operations team in a temporary 6-month project. The R&D Chef is responsible for recipe development for UW Dining and to provide a centralized recipe development process that will improve the quality and accuracy of recipes in the CBORD FSS food production system. This position will be implementing a controlled R&D process, which takes guest needs, product capabilities and nutrition into consideration.
Establish and maintain a controlled recipe development process supported by CBORD FSS, including modifications, timelines, use of industry trends, and food costing.
Develop, test, and refine recipes for all restaurants with consideration given to nutrition goals, food allergens, product sourcing, input from production teams, and customer feedback.
Improve quality of finished recipes by reviewing relevant ones already in CBORD FSS, testing, updating, and approving changes.
Identify the proper ingredients, amounts, equipment, and methods of preparation for all recipes.
Identify new and current recipes for reviewing and testing tailored to customer feedback and production capabilities.
Improve quality and accuracy of nutritional data associated with recipes in CBORD FSS in collaboration with Dining Systems team and Wellness Specialist.
Determine accurate methods of recipe preparation; taking into account kitchen equipment. Set best practice for batch portioning for recipes using appropriate measurement tools and quantities.
Ensure accuracy and completeness of recipes, including: production methods, presentation pictures, batch quantities, and yield amounts.
Ensure increased consistency of menu item preparation by thoroughly refining recipes with updated production methods and presentation pictures.
Audit recipe database, review, adjust, and update recipes in order to eliminate or archive old or duplicate recipes, determine batch recipe format, and measure conversion capabilities.
Submit written recipe revisions for data entry; develop writing methods of preparation in a clear and easy to understand manner, using common weight and measurement standards and terminology for methods of preparation.
Actively participate in committees and Food Manager Meetings, seeking new ideas for food preparation and presentation.
Bachelor's degree in hospitality and/or a certification by a recognized culinary institution, plus a minimum of two (2) years of sous chef-level management experience in culinary operations.
Experience and references must demonstrate:
Detailed culinary knowledge of food inventory, recipes, menus and production methods, including culinary terminology.
Demonstrated ability as a chef skilled at recipe development and refinement.
Demonstrated ability in developing and perfecting menus and recipes for all types of menu items.
Previous experience preparing written recipes that are accurate and easy to follow.
Demonstrated ability to train a production team on how to successfully execute recipes and menu items and how to effectively and safely use production equipment.
Demonstrated ability to provide sound leadership and direction to a culinary team with various levels of experience.
Skill in working in organizing and monitoring assignments to complete work in a timely manner when there are interruptions, changing priorities, changes in workload, meeting deadlines, and competing requirements.
Demonstrated ability to develop and implement a controlled recipe and development process.
Ability to train production team on how to accurately and effectively execute recipes for a large food service operation.
Working knowledge of food safety rules and procedures as they pertain to working conditions and health and safety standards as they relate to a food production area.
Skill in management and supervision of multi-functional staff comprised of operational and administrative personnel to include knowledge of required tasks, skills, personnel selection, evaluation, and development.
Skill in interacting effectively with guests and team members and managers in a high volume public contact setting using positive body language, direct eye contact, active listening, problem solving techniques.
Ability to work on a personal computer, utilizing software such as Word, Excel, Microsoft Windows, food production management software, and other applicable systems.
Mathematical skills sufficient to perform arithmetic calculations involving recipe development, conversions, and extensions.
Success working in a contemporary college/university dining environment.
Possession of a valid Washington Driver's License.

This position will based in the UW Dining Administration Office in Terry Hall. The salary range for this role is $4,500 to $5,300 per month.
