This position is responsible for supervising and coordinating the Food Truck Program which consists of 2 trucks and has a student staff of 12. This is a five day a week operation with special events added when contracted. Emphases is placed on creating exciting menus using the freshest products possible for students, faculty, staff, and guests of the University's main campus.
Food Truck meal production/Kitchen Supervision: - Supervise staff including hiring, establishing job performance standards, evaluating job performance, taking corrective action, training, assigning and scheduling work, and acting upon leave requests. - Actively participate in and direct kitchen staff during food preparation and service; participate in skilled food production and preparation. - Direct and assist with set up of menu selections for service to customers; resolve issues that directly affect production and service of forecasted quantities of food. - Monitor customer counts and consumption of all food products during meal periods or events; ensure food counts are properly entered into the food service management computer program. - Ensure standardized recipes are read and followed; adjust weights and measurements of ingredients to properly match quantity of product(s) being produced. - Taste and inspect quality of food products prior to and during meal production; provide feedback to staff and re-direct preparation techniques to ensure a chef-quality product. - Supervise/direct skilled food service production and participate in delivery of products on campus. - Ensure the availability of fresh produce and properly prepared food items for the production of the Food Truck program. - Actively participate and supervise/direct staff in proper handling and storage of food products. - Supervise/direct staff in effective cost control management of food, supplies, and equipment. - Supervise/direct staff in advance food preparation for next shift or day so food products are ready for production. - Actively participate in and supervise/direct staff in proper packaging, labeling, and storage of leftover food products to minimize food waste. - Ensure cleanliness and sanitation of work areas throughout meal periods; supervise, direct, and participate in the execution of detailed cleaning of work areas during non-operations times. - Supervise/direct and participate in proper utilization and maintenance of food production and service equipment; clean and sanitize equipment after production is completed. - Maintain a safe work environment; report and/or rectify safety hazards immediately. - Ensure proper design and assembly of special food presentations
Other Responsibilities: - Enter production counts into production management spreadsheets. - Run cost management reports for Food Truck production if requested by unit manager. - Assist in monthly inventories when necessary. - Assist with inventory as assigned by the Catering Manager. - Participate in physical counting of inventory in storage locations; straighten up storage areas and mark cases, boxes, and/or bags for efficient inventory. - Transport daily food orders to proper unit storage location after delivery from warehouse or vendors. - Read through requested food orders to make sure enough food products are on hand; coordinate specific special needs. - Advise of specific needs for non-menu items not ordered through Computrition. - Record inventory on monthly inventory report. - Assist in rotation of products in storage areas.
Catering Support: - Place orders for catering unit if needed. - Assist the Catering chef with production for campus events. - Assist with set up duties at special events on or off campus. - Supervise student employees performing service duties in absence of Service Supervisor. - Assemble food to meet special diet needs for customers per instructions from staff dietitian and/or catering chef.

NECESSARY SPECIAL REQUIREMENTS:
Ability to obtain valid WA State Food Handler's permit within 30 days of initial hire date.
Participate in Serve Safe program and pass certification test within six months of initial hire date.
Supervisory or lead experience.
Knowledgeable in applying safety rules and regulations and sanitation for ServSafe guidelines in food service operation.
Demonstrated experience with cashiering functions and a POS system.
Ability to deal with difficult customers and diffusing difficult customer situations.
Demonstrated ability in ordering, receiving and storing perishable and non-perishable items.
Ability to use desktop computer applications including word, excel, menu management system and electronic mail system.
Possession of a valid driver's license.

Pay,Benefits, & Work Schedule
Salary: $2654/month with periodic increases up to $3436/month
Schedule/Appointment: Monday - Friday; Hours will vary
Working Conditions: Work is performed primarily indoors, at times in hot/cold/noisy/wet areas with some exposure to hazardous equipment and products. Working in temperatures from 0 degrees (freezer) to 350+ degrees (around cooking equipment) is common. Work requires walking and standing (often in a stationary position) for the majority of each shift. Bending/climbing/carrying/pulling/pushing/lifting associated with loading/unloading of supplies and preparation, plating and serving of food is required. Occasional overtime is required and shift work may be required.
