Under general supervision prepare hot and cold foods in a manner that is acceptable to all state and local regulations.
Calculate and adjust quantity on recipes; calculate time to cook meat items overnight and hold over, using concepts of cooking and hold oven process.
Know the content of cooking processes and principles in cooking different food items and various methods of cooking. Apply knowledge to varied menus.
Communicate to co-workers and coordinate with cafeteria for quicker, more efficient batch production and delivery of adequate and hot food as needed and timely, chilled storage of excess production. Coordinate cooking processes between shifts for timely production and use of equipment. Present a minimum of one in-service to Dietetic personnel annually.
Collect and review temperature data, time and temperature data in preparation and storage of foods. Evaluates safety of methods and product; make decisions about need for additional cooking, reheating or changes in processes to keep foods safe in accordance with FDA HACCP concepts and practicality of operation. Monitor and perform cleaning processes with least hazardous chemicals. Monitor behavior of personnel to ensure appropriate operation within guidelines of JCAHO, TITLE 18, Oklahoma State and County Health Departments, HACCP, departmental policies and hospital policies. Demonstrate ability in written form by flow charting recipe and relevant processes to further develop skills.
Determine validity of requests and processes for further preparation of foods from cafeteria to meet time involved concepts of keeping a food supply available until the end of service, avoiding excessive production. Exercise personal knowledge of usage related to time of service. Adjust activities as needed when menu, presentation, and labor varies.
Respond to requests with time necessary to produce things for patient meal services. Make suggestions for labor or re-arrangement of menu items to make work-load manageable. Willingly try new and different assignments when labor situation requires changes.
Identify and work to meet underlying needs; follow through on questions, requests, complaints. Provide feedback when needed.
Maintain records and files in accordance with procedures and regulations. Maintain recipe files and flow charts. Make suggestions about requisition forms. Requisitions for cafeteria production and adds to requisition form. Contributes to storeroom ordering process by noting when we are out of things and/or when last case is being used. May order from Vendor when Storeroom Manager is not available.
Perform other related duties as directed that correspond to the overall function of this position.
Qualifications Minimum Qualifications:
Must demonstrate capability to read, follow instructions, and use basic mathematics skills. Able to communicate effectively, both verbally and in writing. Demonstrate knowledge of cooking processes.
High school diploma or GED preferred.
Previous experience in hospital food preparation preferred.
