As a 55M operation with over 30 locations on campus serving over 30,000 meals a day, Cornell Dining must have high standards in recipe development, food production and service. The Quality Assurance & Development (QUAD) Chef ensures Cornell Dining's criteria for culinary, quality and nutritional excellence are met by creating and monitoring innovative and cost effective recipes, efficiencies in production and standards in service.
Thisrolewillworkwithour culinary staff, executive chefs, Director, Nutrition Management andDirector, Culinary Operations todevelop recipes, yields,and specifications for application in a highvolumemeal production environment.This position willworkin satellite test kitchens todevelophighly detailed recipes,evaluate food products,andmethodstosupport cost effectivereproduction,andcaptureyieldingand accurate scaling. Ensure all work is documented and translated to the FSSDataSpecialistforrecipesubmissionintoCBord'sFoodServiceSuite. This position will provide supervision and oversight to hourly employees in the testing atmosphere. They will be responsible for conducting training for new recipes and products and following up with staff, unit Managers and Chefs to ensure ongoing recipe adherence.

Manage testing and sampling of new ingredients.
Associate's Degree or equivalency defined as ACF CEC credentials; minimum 3 years of progressive culinary supervisory experience with at least one year as a high volume Chef or Culinary Instructor.
Exceptional interpersonal skills. Effectivecommunicatorwithabilitytopresentfindingsin a group or individualsetting. Experience leading a team and negotiating with peers and colleagues. Works easily through conflict.

Advanced analyticalskillsandmeticulousattentiontodetail. Commitment to documentation follow through. Extremely comfortable with systems including food management systems and MS office suite.
Strongmathskills,particularlyconvertingweightsandmeasures,determiningcostyields,etc. with close attention to details.
Position will require flexibility in scheduling and will work various hours including nights and weekends. This position will be expected to act in an active culinary capacity from time to time including large events
Additionalcertificationsorequivalentprofessionalexperiencepreferred. Experience as R&D, Controller, or Quality Control Chef preferred
Knowledgeoffoodandhygieneregulations(HACCP) and knowledgeoffoodallergies,intolerances,andspecialdietaryneeds preferred.
Strong understanding of food service management systems.Familiarity with board plan operations and menu cycles a plus.Culinary and food safety certification desirable.
