The Production Manager is responsible for food, equipment, and ordering supplies; using seasonal products and utilizing new food trends. Provides feedback to Culinary Services Director, and participates in menu concept development, special event planning and writing seasonal and custom menus. Maintains food costs, inventory controls and works within financial targets as specified by Dining Services Director. Responsible for the hands on production duties as needed/required. Participates in hiring, training, development, and the supervision of the production staff. Interacts with service managers on food displays to ensure the highest quality of food production, standards, presentations, and techniques. Delivers food in a timely manner in respect to the different areas. Maintains the highest levels of food safety, sanitation and cleanliness in all production areas. Processes payroll; receives invoices, takes inventory, and monitors staff productivity. Assists the Culinary Services Director in other duties as needed/required. Maintains all records of production and standardizes recipes in recipe system. Maintains all nutritional information for department and works with clients to maintain special diet needs. Performs other duties as assigned.
Required Education and Experience:
• High School Degree with five or more years or an Associate’s degree in culinary or business with three or more years of related experience
• Serv-safe Certification
• License/Certification – Valid Driver’s License
• PA Child abuse and FBI Clearance
• Ability to drive a box truck
• Bachelor’s degree in food service administration, institutional management, nutrition, dietetics or related area.
• Four or more years of progressively more responsible supervisory and administrative experience in a high volume food service operation that offers a varying daily menu.
